Phyllis Robinson Chocolatier, Artist and Mad Scientist
Phyllis is passionate about chocolate. She initially learned the art of making fine chocolates from her late mother, Catherine McDonough, who operated a chocolate shop in the family home in Baltimore. Cass, as Robinson’s mother was called by friends and family, specialized in chocolate-covered cherries, “the kind that dribbled down your chin when you took a bite,” Phyllis remembers, and smooth-as-silk buttercreams.
A lifetime student of the art and science of chocolate, Phyllis is a graduate of Ecole Chocolat in Vancouver, Canada, and qualified as a Master Chocolatier at Agostoni Chocolates, in Lecco, Italy, under the direction of Chef Riccardo Magni with further study under the direction of Christophe Domage of Valrhona Chocolate in Tain Hermitage, France. She studied chocolate design, presentation and operations with Master Chocolatier Joanne Mogridge of Cocoa West in Vancouver.
In 2015, Phyllis launched Tandem Chocolates, crafting small batch chocolates with only the finest ingredients, but kept her day job, “just in case.” In 2016, commenting that she “didn’t want to be 85 wondering what-if” she took a big leap of faith and left a successful career in nonprofit housing development, city planning and civic engagement to devote herself fully to the art and science of Tandem Chocolates.
Tandem Chocolates showroom is located at 1662 Bonanza Drive in Park City. In addition to producing artisan chocolates, Phyllis offers workshops and classes in truffle-making and other confections, and hosts private chocolate-themed events.
